We will visit a large olive grove nestled in the quiet countryside of Trani. See the machines and techniques for the collection and processing of the olives until obtaining of extra virgin olive oil. The participants will make the olive harvest that will be then poured into the hopper to be turned into extra virgin olive oil under their eyes. Observation of all manufacturing steps prior to extraction. The participants will make pasta “orecchiette” from Puglia with water, flour and semolina or Bari focaccia with tomatoes, olive oil and oregano in an old stone farmhouse (Masseria).
